Easter Cheese
INGREDIENTS:
- 6 eggs
- 2 cups whole milk
- 1 cup cream
- 1 tsp. sugar
- 1 tsp. salt
- 1 tsp. vanilla extract
- ½ cup raisins
- Whole cloves for decoration
DIRECTIONS:
Whisk eggs, then add milk and cream and whisk again.
Then add salt, sugar and vanilla extract. Whisk again.
Cook in microwave for about 9 minutes, then check consistency and stir, then add another minute or until it resembles scrambled eggs.
Pour into cheese cloth that is laid out in another bowl and begin to spin the cloth tight so the excess liquid is released. Hang the cheese cloth to allow more liquid to drip. Monitor and refrigerate appropriately.
Foodies went fanatic over Bishop Larry J. Kulick’s Easter Cheese recipe. The video is posted on the Diocese of Greensburg Facebook page and on TheAccentOnline.org. It’s a traditional Slovak Easter recipe for “cirak” or “hrudka” that was often used by the Bishop’s family and neighbors in Leechburg during his childhood. “So many people here in Western Pennsylvania are of Eastern European descent.
I think when they see a video like this, it sparks memories of their own family traditions,” Bishop Kulick said.
